Recipe: Basic Chocolate Muffins

 What can possibly be better than a good old chocolate muffin for breakfast on a Sunday morning? Today I'm going to share this wonderful recipe with you, which is, in my opinion, the easiest way to make yummy chocolaty treats.
 I remember finding it on the internet a while ago, and I think this is the kind of recipe where you can let your imagination do the thing and add chocolate chips, M&M's, granola, apples, nuts (anything you like!) to make it even more delicious.
Right then, let's get cooking!

INGREDIENTS:
-1 cup of flour
-1/2 cup unsweetened cocoa powder
-1 cup of granulated sugar
-1/4 teaspoon salt
-1/2 teaspoon baking soda
-3/4 cup hot water (if the texture is too thick and lumpy, add some more)
-1/2 cup canola oil (you can use sunflower oil instead, no problem)
-1 large egg
-1 1/2 teaspoons vanilla extract

First of all, you'll need to preheat your oven to 190°C and line a muffin tray with paper muffin cases, or simply use the silicone/metal molds as I did.

Then combine flour, cocoa, sugar, baking soda and salt in a blender



The next step is to add the water, oil, egg and vanilla, but as you can see, I did not use vanilla in my muffins, because I didn't find any in the house, and could not be bothered to go to the supermarket (sorry!). But frankly speaking, the muffins turned out splendidly, even without the extract. 

Blend all the ingredients on medium-high speed until the mixture is sooth and well-blended 

Spoon teaspoons of the mixture into the paper/silicone/metal cases, dividing it evenly and bake for 15-17 minutes, until toothpick inserted in the center of one muffin comes out clean 


My muffins came out a bit overbaked, as this little one brought all the toys he could reach and just wouldn't let me go and check them, but I mean, how can you say no to him??

But eventually, I managed to slip away and take the chocolate treats out of the oven, and this is what they looked like



When you take the muffins out, just let them cool for about 10 minutes, and if you like, you can decorate them, but I thought mine smelled too good to wait any longer, so the best decision is to pour a cup of tea and enjoy :)

Feeling Autumnal

 Good day to you reading this! October is officially here and I decided that it's time for a good old autumnal photoshoot!  Personally, I'm a huge fan of the season so it wasn't really hard to get inspired, even though 80% of the grass is still green where I am. In this post I am going to talk you through the things I'm wearing, and would like to apologise in advance, as I could not find some of the exact items online. Enjoy!

I just love this necklace so much! ^^ 




 I bought these boots about two years ago in Bershka, but oh my goodness, the quality is absolutely amazing! They still look almost brand new! Maybe it's because I don't wear them too often I don't know, but what I do know is that they are one of the reasons why I look forward to autumn.
